Blazing Bacon and Cabbage Soup

Heading out to a St. Patrick’s Day parade?

You’ll want to come home to this incredible, traditional Irish soup. Sure, we’ve totally traded in the bland for the blazing, but we don’t think there’s anyone that will disagree with our changes. Really, this soup for four is as warming as it is blazing. Next winter, you won’t even wait for St. Paddy’s Day.

We’re sure of that.

Ingredients

 ½ pound Bacon, diced

1 teaspoon Mad Dog 357 Reaper Sriracha Sauce
2 large Potatoes, peeled and cubed
1 can (15 oz.) diced tomatoes with juice
1 cup Chicken stock
Salt and black pepper, to taste
2 cups Savoy cabbage leaves, thinly sliced

Preparation

Heat a large pot (or extra-large skillet) over medium-high heat. Add the bacon and cook until evenly browned. Drain excess fat, then stir in the Mad Dog 357 Reaper Sriracha Sauce, potatoes, tomatoes (with their juice), and the chicken stock. Season to taste and bring to a boil. Then, reduce the heat and simmer for 20 minutes. Finally, stir in the cabbage and simmer for a few minutes longer, then serve piping hot.
