Yes, this is the open-face sandwich that will completely change your mind about sandwiches.

With only a single slice of bread. But, if you really feel like you need to add a second slice of bread, go for it. What’s important here is the Mad Dog 357 Ghost Pepper Hot Sauce.

You’ll need:

For the fiery ghost pork belly strips
1 tbsp. Mad Dog 357 Ghost Pepper Hot Sauce (more for serious heat)
2 tbsp. olive oil
2 lb. pork belly strips, about ¾” thick
salt and pepper, to taste
oven pre-heated to 400°F
baking sheet lined with parchment paper

For the sandwiches
4 large slices ciabatta
butter, for spreading
1 c grated mozzarella cheese
8 slices cooked bacon
4-8 tbsp. mayonnaise
another baking sheet lined with parchment paper
French fries, guacamole, and more Mad Dog 357 Ghost Pepper Hot Sauce, for serving

Preparation

First, prepare the fiery ghost pork belly strips by combining the Mad Dog 357 Ghost Pepper Hot Sauce with the olive oil. Coat the pork belly strips with this mixture and season, to taste, with salt and pepper. Place on the prepared baking sheet and place in the oven. Cook for 30 minutes, turning once, and re-basting as you do so.

Meanwhile, begin assembling your sandwiches by spreading the butter across the tops of the ciabatta slices and sprinkling over the cheese. Add the bacon slices.

When ready, add the fiery ghost pork belly strips and place in the oven for about 5 minutes, until the cheese becomes melty. Remove from the oven, divide between plates and scoop a tablespoon or two of mayo on each sandwich. Serve hot with your favorite sides and an extra drizzle of Mad Dog 357 Ghost Pepper Hot Sauce on each sandwich.
